Sinatra Artichokes Recipe

STUFFED ARTICHIKES alla SINATRA



RECIPE :

4 large Artichokes
2 tablespoons Black Olives, chopped
3 tablespoons Grated Parmesan Cheese 
1 Garlic clove, chopped
1 tablespoon chopped Capers
2 tablespoons fresh Parsley, chopped
1/4 teaspoon Crushed Red Pepper Flakes 
1 teaspoon dry Oregano
1/2 teaspoon Salt
1/2 teaspoon ground Black Pepper
1/4 cup Italian Olive Oil


PREPARARTION : 
,
Rinse Artichokes under cold running water. With a sharp Knife, remove the stem, and cut 1 & 1/2 inches from the top of the artichoke. Pull the center leaves apart, and with a spoon, scraped the fuzzy choke from the center.

Place the Olives, Cheese, Salt, Capers, garlic, Parsley, Red & Black Pepper,  and Oregano in a large mixing bowl.

Gradually add the Olive Oil to bread crumbs, stirring to mix, and mixture is moistened. Spoon the bread crumb mixture into the center of the Artichokes and in-between the leaves.

Place the Artichokes in a baking pan. Add 1 cup of water to the pan, Drizzle a 1/4 cup Olive Oil over the artichokes. Cover the artichokes with aluminum foil.

Bake the Artichokes in a 350 degree oven for 1 hour. 

Remove the foil from the pan. Turn heat up to 400 degrees and bake for about 12 minutes.

Serve the Artichokes. Place each artichoke on a plate, and pour pan juices over the Artichokes.

Serve and Enjoy !!!

MY SHOEMAKER GRANDFATHER'S RECIPE

And GREAT SICILIAN RECIPES




Yes, my Grandfather Nonno Filipo Bellino was a Shoemaker in the town of Lercara Friddi, Sicily,
40 minutes south of Palermo. Frank Sinatra's father Saverio Antonino Martino Sinatra was born in Lercara Friddi and his father was a shoemaker in the town. You might recognize another famous name of someone born in Lercara Friddi, and that would be Salvatore Lucania, better known to millions as Charles "Lucky" Luciano.

Anyway, my grandfather was born and raised in Lercara Friddi where he was a shoemaker, and you can bet money that Frank Sinatra's Shomaker Grandfather knew my shoemaker Grandfather 
Filipo Bellino. They were both around the same age, give or take a few years.

My grandfather immigrated to America through Ellis Island, New York in 1902. Filipo then
settled in Lodi, New Jersey where he set up a Shoemake Shop on Main Street, marrying 
Giuseppina Salemi. Filipo and Giuseppina lived upstairs from the Shoemaker Shop and had 4 children, my Aunt Lilly was born first, then Uncle Jimmy (James) veteran of WW II and recipient of the Purple Heart in The Battle of The Bulge, Uncle Frank was the 3rd child. Frank Bellino was in 
The United States Marine Corps during World War LL, in the Pacific Theater. Then came Uncle Tony who was also in the US Army in WW II where he was head of The Officers Club at 
The George V Hotel in Paris after the Allied Forces Liberated the city.

My mother Lucia (Lucy) was the youngest, born in Lodi 1923 ...

Rice Mixture:

2 cups Italian Arborio rice, or American Carolina rice, or Japanese rice, cooked and drained
2 eggs
1 cup grated Caciocavallo or Pecorino-Romano cheese 
 
Fillings:

1 cup ragĂș or meat sauce
1/2 of a  10 oz package frozen tiny peas, thawed
1 lb fresh ricotta cheese
8 oz mozzarella cheese, cut into small cubes
 
Assembly:

1 cup flour
1 cup water
2 cups unflavored bread crumbs
3 cups canola, vegetable or olive oil for deep frying

The HISTORY


The Borderi Dairy was born in 1930  by  Don Pasquale Borderi,  he was involved in the production and trade of Sicilian extra virgin olive oils. Given the good performance of the business, Don Pasquale decided to expand and diversify his offer, including  typical Sicilian cheeses in his price list.

It was in 1970 that Don Pasquale Borderi's son,  Andrea Borderi,  began to develop his marked sensitivity for the art of transforming milk into dairy products. In the following years, Andrea devoted himself to the intense study of the entire Italian dairy sector and  specialized in typical Sicilian products. But his main love has always been  the creation of his cheeses,  and he began to offer his creations in the markets of Syracuse, Floridia and the entire province. Getting instant success.

The  dairy does not aim at mass production, but at quality. It is precisely this that allows him to win the loyalty of such a large number of customers. All the cheeses marketed in the Borderi stores are handmade, as tradition dictates. 

It is during the tasting that we realize the importance of these slow and prolonged procedures, which enhance the experience of taste and all the other senses. 


In 1998, having become master cheese maker, Andrea Borderi together with his sons set up the family business: the Borderi Dairy, a refined artisan dairy located in Floridia, in the province of Syracuse. Since then the Borderi family, operating in the markets of Ortigia, Syracuse, and Floridia, has won the esteem and trust of a vast private and corporate public.

Behind the production of typical Sicilian cheeses of the Bordieri artisanal Dairy is an accurate analytical study.
